Brown Sugar and Cinnamon Grapefruit

In case you guys haven’t heard…we’re in a bit of a deep freeze here.

It, apparently, dropped about 67 degrees yesterday in our area and that is not an exaggeration.  How do things like that even happen?  Right now, my weather app says it’s “–5 but feels like –30.”

Mmmmmm.
Toasty.

Thankfully, I did not have to go to work today so my plans are to just hibernate in my house with my warmest pair of sweats and my favorite flannel shirt.  By the way, my warmest pair of sweatpants are brown and my favorite flannel shirt is red and pink plaid.  That’s right.  Just call me a fashionista.  Besides wearing my warmest clothes, I plan on also doing things today like drinking hot chocolate and making any type of food that requires me to use my oven.

[On a little side note…during my bratty teen years, I would always run around my parent’s house in plaid boxer shorts (sooo popular back in the day!) and tank tops and then yell when I was cold and ask my parents to turn the heat up.  Their answer was always the same – “We aren’t turning up the heat.  We’re sorry you’re cold, but why don’t you put some clothes on?”  In my mind, getting warmer was as simple as just cranking up the thermostat.

Fast forward fifteen years and I can tell you…times have definitely changed, my friends.  You see, now I’m a homeowner and every time the furnace kicks on, I just see dollar bills blowing out of the registers.  So, we keep our thermostat very low and just wear wool socks and our warmest sweats.  There will be no ‘turning up the thermostat in this house’!  And, I, also, sincerely apologize to my mom and dad for not realizing the value of a dollar.  Lesson learned.]

Alright, now that we have stepped back in time, let’s bring it back to the present and what we were talking about a few seconds ago – staying warm and using the oven.  I cranked it up as soon as I got up and got to work on one of my favorite winter breakfasts – grapefruit sweetened with cinnamon and brown sugar.  I actually shouldn’t even really call this a ‘recipe’ because it’s the easiest thing ever and really requires zero steps, so, maybe I’ll just call it an idea?  Sound good?

Brown Sugar and Cinnamon Grapefruit

Ingredients:

1 whole grapefruit, sliced into two equal halves

1 teaspoon cinnamon

1 teaspoon brown sugar

Directions:

Preheat oven to 400.

Place grapefruit halves (fruit-side up) on a baking sheet.  Loosen segments with a knife, being careful not to cut through the outer peel.  Sprinkle with cinnamon and brown sugar.  Bake for 20 minutes, or until grapefruit begins to brown and swell.

Remove from oven and let cool, slightly, before serving.

Okay.  Time to put my thinking cap on.
What can I make for lunch and dinner that requires my oven?

Stay toasty!
