That Pesky Thing Called a Budget

Hey Friends!  Good afternoon!

We have made it to the middle of the week and it’s all downhill from here, right!?  Today, we had a winter storm move in and dump many inches of snow but, then, the temperature went right back up and most of it has melted.  Boo.  If there is one thing I love, it’s a winter storm and, unfortunately, I don’t feel like we have had enough lately.  Oh well.  I guess warmer temperatures just mean that summer is on the way!

Even though we had a deep blanket of the white stuff this morning, I woke up and wanted an iced coffee.  I have not craved one of those in a long time so I didn’t even fight in and just made myself one!  I counteracted my cold coffee with a warm bowl of oats.  I added a couple of drops of NuNatural’s liquid Cocoa Stevia, some honey, and a scoop of PB.

I spent most of my morning reading some blogs and going over some new Jazzercise routines. A few hours later, I was hungry again and decided it was time to throw some lunch together.  I had some peppers that were starting to wilt so I decided to use them in a quick quinoa pilaf.  I made regular quinoa but added some chicken bouillon, red and yellow bell peppers, black eyed peas, and mushrooms.  It was delicious, filling, and a great way to use up the left over veggies and beans!

I had to go into work later in the afternoon and Lee had a couple of court cases so we rode in together.  On the way there and back, we were discussing our finances and the fact that our wedding is SO close!!  Less than three months!?  Are you serious!?  Anyway, we were talking about our bills and how we could save a few more bucks every month.  I hate conversations about money.  I mean, absolutely loathe them.  Oh well.  Those are the things adults need to deal with!

We just switched our cable company last week, which is going to save us about $70 a month (and we even added a phone line!!  We were paying WAY too much!) and I have been meal planning, which has been saving us a little more when it comes to grocery shopping.  We have decided to look over our cell phone bills and also our car and home insurance to see if there are any costs that we can cut there.  I’m hoping we can find a few more ways to save…Every little bit helps!

Alright, well, I’m off to get some dinner in the oven and plan out my workout for the evening!  I’m thinking TurboFire…
