Weekly Menu – 1/19/14

Hey there!  Hello to Monday, I guess!  Seriously, how do these weekends go so fast?  I’ll never know.

This weekend was one spent with some friends, some family, and some pups…so, it was pretty good!  Friday night, my friend, April, and I had a wine + wedding night.  Yes, we are both married but that doesn’t mean we can’t still be obsessed with shows like Say Yes to the Dress and Something Borrowed, Something New, right?  We love to watch them together and when we can’t do that, we text each other about the dresses from our houses a street apart.  Anyway, this weekend, we made a plan to get together…and, to our surprise, experience a snow storm together, too!  In the four hours that we were together, we got about eight inches of snow.  No one had even talked about snow!  There was mention of a few flurries that might amount to an inch but that was it!  We learned that not many other people got snow either…so I guess there was just one nasty snow cloud over our neighborhood Friday night.  Thank goodness we had our wine to keep us warm!

Saturday was spent at home with the pups and the hubs until he headed to work.  When he left, I ran to the grocery store to do some late evening shopping.  I feel like when I go shopping at night, I don’t have to look as presentable as when I go during the day.  Under Armour leggings, Uggs, and a sweatshirt…perfect late-night shopping attire!  On Sunday, I did a little cleaning around the house and then headed to my grandparents’ house for dinner.  Lasagna, salad, homemade apple pie, and leftover Christmas cookies made for a fantastic dinner with my family…which is not surprising.  We always have good food and good company…and I’m always thankful for every second!

So…now that you know what I did this weekend and what I ate yesterday, let’s move onto the rest of the week and see what I plan to be whipping up in the kitchen.

Sunday:  Lasagna
Monday:  Taco Night!!
Tuesday:  Honey-Mustard Skillet Chicken
Wednesday:  Most like a doggie bag of my parents’ dinner
Thursday:  Stuffed peppers
Friday:  Homemade pizza
Saturday:  To be determined

Every Wednesday and Thursday night, I stop at my parents’ house on my way home from Jazzercise (I drive right by their road so I always pop in to say hi).  Usually, my mom sends me home with leftovers of whatever they ate that night…which is great for me since I get home so late and have zero time to cook!  Luckily, my mom is an amazing cook so everything is so delicious!  On Saturday, Lee is playing in a fundraising alumni basketball tournament at his high school.  I think the games are supposed to last pretty much all day so I’m guessing that we will be heading out to dinner afterwards with a few of our friends…so we shall see what we get into that night for dinner.

Alright, guys…that’s what I think will be going on here this week on the dinner front…but, as always, the meals are subject to change.  Sometimes, I’m lazy and just roll with grilled cheese and there is never anything wrong with grilled cheese.  Am I right or am I right?

    A stir-fry :) I love how versatile they can be…I mean, you can pretty well add anything (veggies, protein) ;)
