Happy Final Round of the Masters Everyone!
I absolutely love golf. I don’t play it a lot, but I love watching it. Golf conjures up some amazing memories of time that I spent with my Pap growing up. I think about my grandpap showing me how to golf in the backyard and going out after dinner every night to practice. I also think about my grandpap leaving to go golfing with his golf league every Wednesday (I think my grandpap is the last one left out of his golf league. Tear. :-(). Finally, I think about always watching the final rounds on Sunday afternoons with him. I actually feel so lost when I watch golf now because I’m so unfamiliar with the new players. I’m still stuck in the time when Arnie was out there with The Bear, Greg Norman, Chi Chi Rodriguez, Lee Trevino, and Gary Player. Who am I? An elderly man!?
Regardless of who is playing, watching golf on Sundays, especially the Masters, brings nothing but happy memories and there isn’t anything better!
In honor of the final round of the Masters and due to the fact that I grew up in Latrobe, Pennsylvania, I am celebrating today by making a Tropical Arnold Palmer.
Tropical Arnold Palmer
48 mint leaves (from 2 or 3 bunches of mint)
4 cups water, plus about 3 cups additional for filling ice cube trays
5 tropical fruit-flavored green tea bags (I used Lipton White Mangosteen and Peach Green Tea, but you can use passion fruit, mango, or any other tropical flavor)
3/4 cup frozen raspberry lemonade concentrate
1 lemon, cut into thin wedges
Place 2 mint leaves in each compartment of two ice cube trays (24 compartments total). Fill with water and freeze.
Heat remaining 4 cups of water in medium saucepan over medium-high heat until water begins to steam and barely simmer, about 4 minutes. Remove from heat; add tea bags and steep 3 minutes. Discard tea bags. Add frozen lemonade concentrate and stir until dissolved. Set aside and cool slightly.
Place 12 mint ice cubes in a large pitcher and pour cooled tea over ice. Stir until ice cubes dissolve.
Serve tea mixture in glasses using remaining mint ice cubes. Garnish with lemon wedges.
Yield: 4 (1-1/4 cup) servings.
