I had no creativity with my title today, obviously. It is what it is. I’m off of work today and I made some protein pancakes for breakfast. Sometimes, it’s just better to be direct, right?
I’m glad that I have the day off today. Usually, I can take them or leave them, but we have a new medical records system at work and last week was when it finally was implemented. I feel like I have the new system and how it works under my belt and my co-workers and I are doing really well at working together to find what works best for our office, however, it’s just an exhausting process. The routine of the office and, specifically, the front desk area where I work, has changed and it will just take some time to get into the groove of things and figure out the best way to do everything. Things are a little more chaotic and days are a little longer…We are confident, though, that we will be great! We are already rocking it and I know it’s only going to get better from here!
Alright! Enough about work!
Today is a ‘not so pretty’ day around here. Last night we had some kind of weird rain/icy mixed storm and it was very dark and cloudy…and, the same weather seemed to carry over to today. The clouds and dreariness made it very hard to get out of bed today. Fortunately, on my days off, I usually take the time to make myself a nice filling breakfast, so that idea of that was enough to get my butt out from under the warm covers.
Today on the breakfast menu? Protein pancakes, turkey bacon, an apple with PB, and a cup of coffee.
Strawberry Oatmeal Protein Pancakes
Ingredients:
1/2 cup oats
1 scoop strawberry protein powder
1/2 teaspoon baking powder
1/4 cup skim milk
2 egg whites
1/2 teaspoon vanilla
Directions:
In a medium bowl, add oats, protein powder, and baking powder and mix until combined. Add remaining wet ingredients and stir until thoroughly mixed together. If mixture is too thick or too thin, add more oats or more milk until batter reaches the desired consistency.
Scoop 1/4 cup of batter onto a hot griddle prepped with cooking spray. Allow pancake to cook for 1-2 minutes and then flip. Allow to cook 1-2 minutes longer before removing from griddle.
Top with desired toppings – I used fresh strawberry preserves!
Yield: 3 pancakes
These pancakes are super filling and will give you the energy to tackle your day!
My day? Laundry (it seriously is never-ending around here), a little wedding planning, and teaching two Jazzercise classes. I probably should have had more than three pancakes…I think I’m going to need the energy! These gray skies are making me sleepy!!!

They are a great way to throw some extra protein into the morning!
I made these this morning and didn’t have strawberry protein, so I used vanilla instead. They weren’t the best I’ve had — pretty dry and not sweet at all. Knowing me, I’ll probably try them again and add some pure maple syrup to the batter to make them sweeter and more moist!
The strawberry powder seemed to give them most of their flavor. Thanks for trying them, though, and some syrup in the batter would be great!
