So…I have a bit of a problem.
Sometimes, I’m lazy. Like, really lazy.
I walk into the kitchen because I’m hungry and when I open every cabinet and find nothing that is ‘ready to eat’, I retreat back to where I came from because I just don’t want to make anything.
I set my alarm much earlier than I need to because I want to wake up, get ready for work without rushing and grab a nice breakfast at home, but then I hit snooze and find myself rushing around and barely making it out the door on time. Sans breakfast.
(Don’t worry. I still eat breakfast. Just a couple of hours later than I would like. When I’m completely ravenous.)
I am home alone at night a lot because of my police officer’s crazy schedule and, while I always want to make myself a gourmet dinner, the thought of eating it alone depresses me and I just pour myself a bowl of cereal.
Um…I’m not really sure where I’m going with all of the lazy facts about myself, but let’s sum up what we have learned so far…
1. I like things that are ‘ready to eat’
2. I need quick breakfasts because I am always rushing out the door
3. I love cereal.
Thankfully, I made cereal bars that take care of all three of those most important facts that I just imparted to all of you. I know. I’m just full of deep thoughts and infinite wisdom today.
Eh, sometimes you have those days when all that is necessary is something delicious. No thoughts, no worries…just deliciousness.
Peanut Butter Cereal Bars
Ingredients;
1-1/2 cups Corn Flakes
1 cup Multi-Grain Cheerios
1 cup quick oats
1/3 cup honey
1/3 cup packed brown sugar
3 tablespoons peanut butter
Directions:
In a large bowl, combine Corn Flakes, Cheerios, and oats.*
In a small saucepan, combine the honey, brown sugar, and peanut butter. Cook and stir until the brown sugar and peanut butter is melted and the mixture is smooth.
Pour over cereal mixture and gently stir to coat evenly.
Transfer mixture to an 8-inch square dish coated in cooking spray and gently press down with a rubber spatula or your hands. Cool and cut into bars.
Store in the refrigerator.
*Feel free to use any type of cereal you want. I have used regular Cheerios, Wheaties, and Special K!
Okay, so I have a way to eat cereal that requires no work and is great to grab on the go.

i think these are great! i’d use them as snacks too. I often just juice in the morning and then carry snacks for later. like these!

ideally I would love to get up early and relax a bit to get in the right mindset for the day. instead I hit snooze and I end up with just enough time to shower, make a somewhat decent breakfast, pack lunch, grab coffee and run out the door.
oddly enough I can do this all in 50 mins. one of the perks of being a guy.
those breakfast bars look awesome btw.
I am always just making it out the door with not an extra minute to spare! I’m never late for anything, but it’s a mad rush everywhere I go!

Yum! These sound so fun. I love having breakfast bars or meals that I can just grab on the go, especially if I have something early in the morning to get to. Otherwise I stick with my pancakes or oats
